Everything You Need to Know About Dunnage Racks

Chefs and other restaurant staff love to talk about grills, ovens, pots, pans, and all the best cooking equipment on the market. But they often overlook the nifty devices that are crucial to the success of the foodservice operation.

Today, foodservice Equipment Specialist at PBAC, Joshua Erdheim, tells you everything you need to know about dunnage racks

 

Sam Tell: What are dunnage racks?

Joshua Erdheim: Dunnage racks are racks or units that you place and store boxes or other heavy products on to keep them off the floor. They are low in height, typically only one shelf or level, and they allow for easy cleaning underneath as there is 6” or more between the bottom of the shelf and the ground.   

 

ST: Why do kitchens need dunnage racks?

JE: To maintain proper sanitation, the New York City Department of Health requires that restaurants and other cooking establishments keep their ingredients at least 6 inches above the ground in storage areas. Dunnage racks provide this half-foot buffer, as well as a convenient and durable space for kitchen crews to stockpile bulk ingredients and other supplies.

 

ST: What are the three types of dunnage racks?

 

Mobilemobile dunnage

Mobile dunnage racks are ideal if your restaurant or café stores food or other retail items in bulk. Easy-to-maneuver shelving solution features caster wheels for moving from one area to another, such as from a walk-in freezer to the prep kitchen. These high-capacity racks provide more flexibility than traditional shelving while offering a sleek aesthetic appearance.

polymerPolymer racks have smooth surfaces and rounded edges that prevent the tearing or ripping of any food packaging. They are both rust and corrosion resistant, making them a long-lasting option.

 

 

Wire

Wire racks are very useful when there is a tight space between a wall and equipment or shelving, and the customer wants to store and place boxes or other heavy products on top. They also tend to be more economically priced.
