Creating Memorable Dining Experiences: From Service to Ambiance

Written by The Sam Tell Companies | Oct 11, 2023 2:33:01 PM

Experienced restaurant operators understand the tremendous effort that goes into every delicious dish, even before the restaurant opens its doors. Both the front of house and back of house require meticulous planning to ensure a memorable dining experience for customers. In this blog post, we enlisted the expertise of Design Specialist Casey Fazio and Tabletop Afficionado Linda Tell to share valuable insights on creating a truly exceptional dining establishment.

Build Your Back of House Backbone

To create an unforgettable dining experience, it is vital to design a kitchen tailored to your menu, design a kitchen for maximum efficiency, and invest in top-notch commercial kitchen equipment.

Tailor your kitchen toward your menu

When designing your kitchen, it is crucial to take your menu items into consideration. Failing to do so can result in wasting valuable time and money on equipment that may not suit your menu. Casey emphasizes the importance of setting up an efficient kitchen that can effectively prepare meals based on your specific menu. "For example, the layout and equipment needed for a steakhouse will be vastly different from those required for a bar and grill. Different menu programs may necessitate specific storage requirements, such as ample freezer space for restaurants with a large amount of frozen goods or sufficient cooler and dry storage space for farm-to-table establishments," says Casey. The precision in designing these spaces ensures that every ingredient has its place, ready to be utilized in creating culinary masterpieces that contribute to your concept.

Design your kitchen for maximum efficiency

Failing to design a kitchen for maximum efficiency is a costly mistake with a direct correlation to your bottom line. Every second counts in the kitchen and successful chefs understand every second a dish is delayed in a kitchen can make or break a patron's experience. “The less the kitchen staff need to move about the kitchen, the more efficient it will be. Each prep area should be set up so that kitchen staff can work a station and have everything needed within arm’s reach and specific equipment must be selected to keep up with the items on the menu," says Casey. With everything within arm’s reach, the preparation of orders becomes a choreographed dance, ensuring dishes are plated with precision and served promptly. Specific equipment is chosen with care, aligning with the menu’s demands, thus further enhancing the speed and accuracy of every order.

Choose quality kitchen equipment

Selecting the wrong equipment from the start can be a disastrous ordeal. The last thing you want is faulty kitchen equipment that breaks down during service, then having to wait days or weeks for replacement parts and repairs. Best case scenario, the customer is waiting longer than they should to get their food. Worst case scenario, you need to remove items from the menu that cannot be made, or you need to shut down. But when you choose quality equipment, “the equipment will have a longer lifespan and superior durability compared to lesser versions. When something breaks down or needs replacing, parts tend to be readily available. Not only does quality equipment stand the test of time, but it can also offer a chef more versatility within the limited space of a kitchen," says Casey. Focus On Your Front of House

In the realm of culinary excellence, especially those interested in Michelin Stars, presentation is paramount. Linda Tell, an expert in the art of tabletop design, shares her insights on how choosing the right dinnerware, flatware, and glassware can elevate the dining experience from ordinary to extraordinary.

Enhance your dishes with the right dinnerware

An often overlooked feature of one's dining experience is tabletop and dinnerware. “Everyone knows the eyes eat first, and the dinnerware you choose absolutely contributes that," says Linda. "For example, if your menu embraces fresh, local ingredients, you might want to consider stoneware or matte finishes to achieve a more earthy, handmade feel. Or if you’re serving seafood, maybe you want to go with deep blues to evoke feelings of the ocean. Even simple white china can enhance dishes – you can play around with the shape and size of the plate, or the width of the rim – or no rim at all – to draw attention to the food." At the same time, one must not forget about quality. "It’s also important to invest in durable china that won’t chip or show scratch marks. That’s a crucial part of the customer experience as well," adds Linda. In essence, you want quality dinnerware that aligns with your menu program.

Incorporate creative tabletop details

There are many small creative tabletop details one can overlook that make a huge difference in the eyes of the customer. “One of my favorites is serving wine pours in a small carafe,” says Linda. "It’s not just about the elegance; it’s a practical investment – the effort put into such details allows restaurants to add a premium to the cost per glass, ensuring these thoughtful touches pay for themselves, enriching both the experience and the bottom line." Other details such as candle type, napkin color, and condiment holders are also important considerations when striving for the perfect ambiance. Make sure you have the details right, especially if you are striving for awards.

Choose the appropriate flatware

Flatware has a profound impact on the dining experience. Weight, color, material, and size are all important factors to consider, but flatware isn’t just a tool; it’s a statement. Linda aptly observes, “You can tell a lot about a restaurant by the look and feel of the flatware. Imagine eating an expensive meal with a flimsy fork. Not a great customer experience. When you pick up a nice fork, and you feel the weight of it in your hand, you just know the quality of the food will match," says Linda. High-quality flatware can enhance the expectation of a fine meal, while flimsy flatware may detract from the experience.

Elevate the dining experience with glassware

Glassware, Linda believes, is an area where preferences are strong and opinions are fervent. “If you want to enhance the dining experience, serve your cocktail in fun glasses,” she advises. "Different glass shapes can elevate the experience – a coupe, a cooler, or a nick & nora can transform a cocktail into an artful creation. Personalized garnishes and unique picks add an extra layer of charm." When focusing on wine, Linda recommends using distinct glasses for red and white wines, reserving an even more refined glass for reserve bottles. "Diners want to feel special, and there’s no better way to do that than to bring out a special glass just for them," she says. Make your patrons feel unique by stocking a variety of glassware for various beverages.
